400ml chilled medium-fat cream 4 tender coconuts' meat 0.5 cup tender coconut water 400g sweetened condensed milk or 6-7 tbsp powdered sugar
Blend the meat of three tender coconuts along with the tender coconut water until you achieve a smooth paste.
Finely chop the remaining tender coconut meat into small pieces for added texture.
In a separate bowl, whisk the chilled cream until soft peaks form. Avoid over-whisking to prevent the cream from curdling.
Gently fold in the coconut paste, condensed milk, or powdered sugar, along with the chopped coconut pieces until well combined.
Transfer the mixture into a freezer-safe container or baking pan. Cover with aluminum foil to prevent ice crystals from forming.
For the first three hours of freezing, remove the ice cream from the freezer and whisk it thoroughly to prevent the formation of ice crystals.
